BBQ Jackfruit Fries

5 Russet Potatoes, Washed & Peeled
1 - 20 oz can Jackfruit
1/2 cup Vegetable Broth
3 Tbsp Olive Oil
1 tsp Salt + More to Taste
1/2 tsp Pepper
1 & 1/2 cup BBQ Sauce of Choice
1/4 cup water
1 cup Vegan Cheese, Shredded
1/4 cup chives or green onions, diced


Step 1:

Preheat oven to 425º F

Step 2:

Begin by cutting the potatoes in 1/2" strips. This is easiest by cutting into planks and then cutting again in strips or a regular fry shape.

Step 3:

Add the potatoes into a mixing bowl and drizzle with olive oil, salt, and pepper. Mix and transfer to onto a sheet pan in a single layer. Cook for about 35-40 minutes or until golden brown. Flip halfway through.

Step 4:

While the fries cook, make the bbq jackfruit by adding the jackfruit to a pan over medium heat with the vegetable broth.

Step 5:

Bring the mixture up to a simmer and cook until all the vegetable broth is evaporated or about 10 minutes.

Step 6:

Once there is no more liquid in the pan, use a potato masher to mash the jackfruit until it resembles traditional pulled pork.

Step 7:

Add 1 cup bbq sauce and the water. Mix together and continue cooking over medium-low heat for 5 more minutes. After 5 minutes, turn off heat until fries are finished cooking.

Step 8:

When the fries have finished in the oven, sprinkle with a pinch of salt and transfer to oven safe dish. Layer starting with the fries, the spoon the jackfruit mixture on top finishing with the remaining 1/2 cup of bbq sauce and vegan cheese shreds. Broil for 5 minutes.

Step 9:

Finish with chopped chives or green onions and salt if needed. Enjoy!
