Creamy Mushroom Florentine

Instructions
In a large pan over medium heat add the oil and mushrooms, ensuring not to over crowd the pan. This might have to be done in two batches. Once mushrooms are golden, add the shallot and cook 1-2 minutes. Add the garlic and Italian seasonings and cook another minute. If the mixture is dry, add the extra tablespoon of olive oil then sprinkle in the flour and cook for another minute.
Begin cooking the pasta as directed on package directions. While the pasta cooks, add the vegetable broth into the veggies, bring to a simmer and cook down until the mixture coats the back of a spoon or about 8-10 minutes.
When mixture has thickened, add the yogurt, nutritional yeast, and salt and pepper to taste. Mix with pasta and add some pasta water if mixture is too thick. Serve immediately with vegan parmesan if desired.
