Instructions
Step 1:
Preheat oven to 350º and make the flax egg by adding 2 tablespoons of ground flax seed with 4 tablespoons of water.
Step 2:
Meanwhile, add the butter and sugar to a mixing bowl. Mix for 2-3 minutes until light and fluffy. Add the flax egg mixture and vanilla. Beat again for 3-4 minutes or until pale in color.
Step 3:
Toss in the cornstarch, flour, baking powder, baking soda, and pinch of salt. Mix just until it comes together, then add the sprinkles.
Step 4:
Scoop cookies and toss in a bowl of extra sprinkles to coat the outside of the cookie. Place on a greased sheet pan and cook for 11-12 minutes.
Step 5:
Let cool for a few minutes on sheet pan then transfer to cooling rack until ready to store or serve. Enjoy!
