Lemon Pepper Potatoes

Instructions

Step 1:

Bring a large pot of water to a boil. Add the cut potatoes in and cook for 8-10 minutes.

Step 2:

While the potatoes cook, preheat oven to 425º (or 400º on air fryer.)

Step 3:

Once the potatoes are slightly fork tender, drain and add to a bowl. Toss in the remaining ingredients expect lemon. Mix together until potatoes are slightly crumbly. This adds texture when baking/air frying.

Step 4:

Place on baking sheet or in your air fryer basket. If baking bake 15-20 minutes or until crispy and flipping at the 10 minute mark. If air frying baking about 10-15 minutes.

Step 5:

Remove and squeeze the lemon juice on the potatoes. Finish with the sea salt. Feel free to add more herbs if desired. Enjoy!

2 lbs Fingerling Poatoes, cut in half lengthwise

2 Tbsp Olive Oil

1 tsp Salt

1/2-3/4 tsp Pepper

1 Tbsp Parsley, chopped

1 tsp Thyme

1 tsp Rosemary

Flakey Finishing Salt
