Lupini Bean Cups

Instructions

Step 1:

Preheat oven or air fryer to 400º

Step 2:

In a food processor, pulse the lupini beans until they are roughly chopped. Do not over pulse.

Step 3:

Once you’ve reached a consistency to your liking, transfer to a sheet pan or bowl.

Step 4:

Over the beans, add the soy sauce, oil, garlic powder, paprika, and maple syrup. Toss until combined.

Step 5:

Place in oven or air fryer. If air frying cook 10 minutes and if baking cook 15-20. Keep an eye on them and remove once they are toasted and lightly brown.

Step 6:

Taste and add salt & pepper as needed

Step 7:

Place in lettuce cups and serve with desired toppings.

1 Tbsp Soy Sauce

1 Tbsp Olive Oil

1 tsp Garlic Powder

1 tsp Smoked Paprika

1 tsp Maple Syrup

Salt & Pepper to Taste
