Maple Mustard Crispy Chick’n Sandwich

Instructions
Start by warming up oil to 350º F
For the Sauce
While oil warms up, start by making your sauce. Combined everything together and set aside.
The Coating
Create your dredging stations. For the dry mixture, combine everything together in a shallow bowl. Do the same thing in a separate bowl for the wet batter ingredients.
Using a spoon, pour small amounts of the wet batter into the dry batter. About 3 tbsp of wet batter or so. Mix the dry batter so there are large bits. This adds texture to the coating.
Using protein of choice (I like to shape my own seitan), coat in the wet batter first, then carefully move to the dry batter. Ensure all sides are coated. Do this again so that it has been coated twice in the wet and dry batter.
Do this same procedure for all the pieces of tofu or seitan. Set on wire rack or plate until oil is ready.
Frying
When oil has reached 350º place the coated pieces in the oil. Cook for 6-8 minutes flipping at the halfway mark. Cooking time is subject to the size of your pieces. The smaller pieces will cook faster than larger pieces. Once they reach golden brown and crispy, they are ready to be taken out.
*Do not over crowd the oil as this will lower the oil temp*
When ready to be removed, transfer back to wire rack or towel lined dish. Sprinkle with salt as desired.
Finish the pieces by spoon with the maple mustard sauce. If the sauce is too thick, heat up for a few seconds in the microwave until it is thinner.
Assemble
Toast the sandwich bun on a greased pan with oil if desired. Assemble the sandwich with the bun, the sauced crispy pieces, pickles, any additional sauces, and top bun.
Serve immediately and enjoy!

1 cup non-dairy milk
1 tsp vinegar
1/4-1/2 cup all-purpose flour
1/4 tsp black pepper
1/2 tsp salt
Dry Batter
2 & 1/2 Cup All-Purpose Flour
1 tsp Baking Powder
2 tsp Garlic Powder
2 tsp Onion Powder
1 tsp black pepper
1 tsp salt
Sauce Mixture
4 Tbsp unsalted butter, melted
1/4 cup maple syrup
1 tbsp lemon juice
1/2 tsp chili powder
1 tsp garlic powder
3 Tbsp Dijon mustard
1/2 tsp smoked paprika
To Cook
8 oz Seitan or Tofu of choice
Vegetable oil or oil of choice for frying
Salt to finish
Assembly
Sandwich buns
Sandwich pickles
Toppings and sauces of choice
