Pumpkin Pie Protein Baked Oats

Instructions
Preheat the oven to 400º
In a blender, add the milk and oats. Blend for 30 sec - 1 min. or until the oats are broken down into small pieces.
Add the oat mixture to a large bowl along with the rest of the ingredients. Mix everything together.
Add into a small ramekin or glass dish and bake for 20-25 minutes. At the 20 minute mark the center should still be slightly gooey. At the 25 minutes the center will be completely baked.
Remove from oven and let cool 5 minutes. Enjoy with a dusting of powdered sugar if you choose.

1/4 cup pumpkin puree
1/4 cup protein powder
1 tbsp flax seeds
2 tbsp maple syrup
1 tsp vanilla
1 tsp baking powder
1/2 tsp pumpkin pie spice
1/8 tsp kosher salt
Powdered sugar for topping (optional)
