Sweet Corn Basil Pasta

Instructions

Step 1:

Cook your pasta according to the instructions on the packaging. Cook just until al dente. Save some of the pasta water. Over medium heat, add the oil/butter to a saucepan along with the corn. Cook just until golden. Add in the garlic and pepper flakes if using, and cook for another minute.

Step 2:

Add the wine, milk, lemon juice, and flour. Cook until it begins to thicken. Then add the basil, nutritional yeast/parmesan cheese and pepper. Stir until incorporated. Salt to taste. Finish with more vegan parmesan and basil on top. Enjoy!

16 oz Pasta of Choice

2 Cups Sweet Corn

3 Tbsp Vegan Butter or Oil

3 Cloves of Garlic, Minced

1/3 Cup Basil Leaves, Chopped + More for Topping

1/4 Cup Dry White Wine

1/2 Cup Unsweetened Non-Dairy Milk

1 tsp Flour

1 Tbsp Lemon Juice

1/4 Cup Nutritional Yeast or Vegan Parmesan, Grated

1 tsp Black Pepper

1 tsp Red Pepper Flakes

1/2-1 Cup Reserved Pasta Water

  1. just a quick question: I can´t see the list of ingredients and wanted to make sure if anyone else has the same problem or if it´s just me. Under “Ingredients” I only see “Cook your pasta according to the instructions on the packaging. Cook just until al dente. Save some of the pasta water.”
