Sweet & Spicy Chicken Tenders

Instructions
To Make the Tenders
Preheat oven or air fryer to 400º F
Form your seitan into small tender like shapes. I usually make mine about 1/2" in thickness. I place in the freezer while I setup the dredging station. This helps it stick together.
In a small shallow bowl, combine the ground flax seed and milk. In another shallow bowl, combine the breadcrumbs, flour, garlic powder, salt, and pepper.
When ready to bake, remove the tenders from the freezer and dip into the milk mixture and then into the breadcrumb mixture. Place on air fryer rack evenly spaced. Cook for 20 minutes flipping halfway through.
For The Sauce
Combine all the ingredients for the sauce in a saucepan over medium heat. To add the cornstarch, it is best to mix with the water prior to adding into the rest of the ingredients. This is called a "cornstarch slurry."
Bring the mixture up to a low simmer, stirring occasionally. Once the mixture starts to thicken, turn off the heat. Now the sauce is ready!
To Serve
When ready to serve, toss the tenders in the sauce and serve immediately. If the sauce is too thick, add a small amount of additional water to thin out slightly. Feel free to top with green onions, sesame seed, or chives.

1/4 cup soy sauce
1 tablespoon hot sauce
1 cup water
1/4 cup brown sugar
1 tablespoon cornstarch
Breading
10 oz seitan
1 cup milk
2 tbsp ground flax seed
1 cup panko breadcrumbs
1 teaspoon garlic powder
1 tsp salt
1 teaspoon ground black pepper
To Serve
Green onions
Sesame seeds
Chives
