Cracker Candy is a must-have treat in my house around the holidays. With one bite you'll understand why. It's the perfect balance of texture and flavors. Fair warning, be sure to make enough - it's addictive.
1 cup vegan butter
1 cup brown sugar
1 sleeve of saltine crackers or vegan graham crackers
3 cups vegan chocolate chips or entire package
Salt to finish
1 cup chopped nuts (optional)
Preheat oven to 375º F. Begin by lining a sheet pan with aluminum foil and lightly greasing. Spread the saltines out on the pan in one thin layer completely covering the bottom of the pan.
In a saucepan over low heat add the butter. As the butter begins to melt add the brown sugar and stir vigorously until it comes together. Be careful, it will be hot.
When the mixture has combined, turn up the heat to medium. Once boiling, cook for 2 minutes stirring continuously. Remove from the heat immediately.
Pour the mixture over the saltine crackers and use a spatula to spread until a thin layer covers the all the crackers.
Place into the oven for 5 minutes.
Remove from the oven. Sprinkle the chocolate over the crackers and place back into the turned off oven for one minute until the chocolate is melted.
Use a spatula to spread the chocolate over the crackers in a smooth even layer. Top with salt and nuts to finish!
