Vegan Croque Monsieur

Vegan Croque Monsieur

  • 5 tablespoons vegan butter
  • 1 clove garlic, minced
  • 4 tablespoon flour
  • 1 & 1/2 cups non-dairy unsweetened milk
  • 1/4 tsp dijon mustard
  • Pinch of grated nutmeg



  • 8 Soft sandwich bread slices
  • 8 oz Plant-based deli slices
  • 16 oz Non-dairy cheese
  • Flakey sea salt


Step 1:

Preheat oven to 425º F

Step 2:

In a saucepan over medium heat add the butter until completely melted.

Step 3:

Add in the garlic and cook for about a minute.

Step 4:

Sprinkle in the flour while whisking constantly. Let cook for at least a minute up to a couple minutes.

Step 5:

Add in the milk slowly while whisking. Continue to stir until it begins to thicken. Turn off the heat when it's thickened.

Step 6:

Assemble the sandwiches by placing half of the bread slices in a thin layer on sheet pan

Step 7:

Spoon the béchamel on the slices, then a couple slices of deli "meat," top with the cheese. Place the second slice on top of each and spoon another layer of béchamel and top with cheese to finish.

Step 8:

Cook in oven for 12-15 minutes until beginning to bubble/brown. You can broil 2-3 more minutes to finish, but keep an eye when doing this.

Step 9:

Remove from oven and serve with flakey sea salt.
